Two products sold under one name
Search for a Zion photography tour and you get two entirely different things at wildly different prices, and the listings rarely make the distinction clear.
A half day photo tour is three or four hours around sunrise or sunset, visiting two or three locations with little walking, with a local professional showing you where to stand and helping with settings. That is the common product and the one most visitors want.
A multi day workshop is a several day programme, often combining Zion with Bryce, with instruction, review sessions and early starts every day. Different money, different commitment, and aimed at people who came primarily to photograph rather than to visit.

Two details are worth pulling out. The non shooting guest rate is unusually useful if you are travelling as a couple and only one of you cares about photography. And the four photographer cap is genuinely small, which at a viewpoint at sunset is the difference between getting help and queuing for it.
Who each format suits
Half day tour
You have a camera you do not fully understand, or you simply do not know where to stand at sunset. Three hours with someone local solves both, and you still have the rest of the trip free.
Multi day workshop
Photography is why you came. You want repeated attempts at the same light, review and critique, and you are willing to be up before dawn for several days running.
Neither
If you are confident and just want the light, the classic viewpoints are all on the shuttle line and free. Canyon Junction bridge at sunset is the famous one and needs no guide.
Whichever you pick, check when to come first. Light in the canyon changes enormously by season and the gold cottonwoods in late October are the reason many photographers choose that window.
